Precautions for the use of fryer
1. Fryer operation: When the temperature reaches the set temperature, frying can be carried out. At this time, add a small amount of the food to be fried, and then gradually increase the amount, so that the operation will not cause the oil temperature to drop too much at once, affecting the color and quality of the food. In this way, the fryer can work continuously and improve work efficiency. If too much food is put in at one time, the temperature will drop sharply, affecting the frying effect.
2. Oil discharge procedure: If the oil in the fryer needs to be replaced or cleaned, remember not to put water first. Open the oil drain valve, drain the oil in the oil drain valve, and then open the oil drain valve to drain the water.
3. Sewage discharge procedure: After frying for 1 working day, the sewage will be discharged when the oil temperature drops to about 80 degrees. Open the drain. At this point, water and food scraps will flow out, waiting for the oil to flow out of the drain. Just close the drain valve at this point.
4. Water adding procedure: After the sewage work is completed, you can add water at the bottom until the water level, or you can add water before the fryer works for the second time, because some food residues are easy to float.
5. When the fried food in the fryer produces a lot of slag, pay attention to the cleaning of the heating tube. Because food residues fall on the heating tube, carbon residue will form on the surface of the heating tube after a long time, which will affect the oil output. For this reason, sewage discharge should be increased during the frying process.
6. For fried fish products, because the fish contains a lot of colloids, a layer of heat will accumulate on the surface of the tube over time, which will affect heat dissipation and affect the color of the oil. Therefore, the fryer needs to be cleaned every shift. If there is an attachment on the heating tube, clean it with a knife or spatula.
7. After all the work of the fryer is completed, the slag discharge should be cleaned up, especially the filter slag discharge channel should be kept unblocked.
